2 tablespoons Olive Gourmet Wild Fernleaf Dill Infused Olive Oil

2 tablespoons Olive Gourmet Sicilian Lemon White Balsamic Vinegar

2 medium cucumbers, peeled and sliced thinly

2 small green onions, thinly sliced, including some of the green

1 tablespoon sugar1 tablespoon fresh dill, chopped to release the flavor

2 tablespoons sour cream (optional–for a creamier dressing)

Sprinkle salt over cucumbers in a bowl.

Let stand until cucumbers are soft, about 5 minutes.

Squeeze liquid from cucumbers and discard.

Mix the olive oil, balsamic vinegar, and sugar in a bowl; add onions, dill and cucumbers and toss to coat.

Season with black pepper. add sour cream last, if desired

Chill completely before serving, at least 30 minutes.

Note: After you’ve eaten the cucumbers, if there’s any dressing left in the bowl, dip fresh, crusty bread in what’s left!
