Black Bean & Corn Salsa

Course Appetizer

Ingredients
  

  • 1 15 oz. can black beans rinsed & drained
  • 1 Cup frozen corn kernels thawed
  • ½ Cup chopped red bell pepper
  • ½ Cup finely diced ripe tomato
  • 8 small green onions- chopped including some green
  • ½ Cup chopped fresh cilantro
  • 2 TBSP Olive Gourmet Persian Lime EVOO
  • 2 TBSP Olive Gourmet Jalapeño Balsamic Vinegar
  • 2 TBSP Olive Gourmet Chipotle Baklouti Green Chili or Cayenne Chili EVOO, depending in your heat tolerance
  • ½ tsp salt
  • ½ tsp ground cumin

Instructions
 

  • Mix all ingredients well. Refrigerate overnight to blend flavors.
