Southwest Pasta Salad
One of our favorites! Select the pasta and oil to suit your desired level of spiciness.
- 1 package Pastamore' Habanero linguini or Hatch Green Chili fettuccini or traditional linguini or fettuccini – your choice
- 1/4 cup Olive Gourmet Chipotle Extra Virgin Olive Oil or choose a hotter oil -pick your heat level
- 2 Tbsp Olive Gourmet Ripe Peach White Balsamic Vinegar
- 1 garlic clove minced
- 2 Tbsp chopped fresh parsley
- 1 tsp ground black pepper
- 1 tsp crushed red pepper optional
- 1 tsp Seasonello Herbal Salt
- 2 medium tomatoes diced or 1 C. Cherry tomatos, halved
- 1 small green pepper chopped
- 1 medium onion chopped
- 1 can red kidney beans drained
- Cook pasta according to directions on the package (don’t doubt cooking time!). Rinse thoroughly in cold water. Place pasta in medium-sized bowl. Add remaining ingredients and toss well. Adjust the seasoning from mild to hot with the crushed red pepper.
