Black Bean & Corn Salsa
Ingredients
- 1 15 oz. can black beans rinsed & drained
- 1 Cup frozen corn kernels thawed
- ½ Cup chopped red bell pepper
- ½ Cup finely diced ripe tomato
- 8 small green onions- chopped including some green
- ½ Cup chopped fresh cilantro
- 2 TBSP Olive Gourmet Persian Lime EVOO
- 2 TBSP Olive Gourmet Jalapeño Balsamic Vinegar
- 2 TBSP Olive Gourmet Chipotle Baklouti Green Chili or Cayenne Chili EVOO, depending in your heat tolerance
- ½ tsp salt
- ½ tsp ground cumin
Instructions
- Mix all ingredients well. Refrigerate overnight to blend flavors.
