Southwest Pasta Salad

One of our favorites! Select the pasta and oil to suit your desired level of spiciness.

Ingredients
  

  • 1 package Pastamore' Habanero linguini or Hatch Green Chili fettuccini or traditional linguini or fettuccini – your choice
  • 1/4 cup Olive Gourmet Chipotle Extra Virgin Olive Oil or choose a hotter oil -pick your heat level
  • 2 Tbsp Olive Gourmet Ripe Peach White Balsamic Vinegar
  • 1 garlic clove minced
  • 2 Tbsp chopped fresh parsley
  • 1 tsp ground black pepper
  • 1 tsp crushed red pepper optional
  • 1 tsp Seasonello Herbal Salt
  • 2 medium tomatoes diced or 1 C. Cherry tomatos, halved
  • 1 small green pepper chopped
  • 1 medium onion chopped
  • 1 can red kidney beans drained

Instructions
 

  • Cook pasta according to directions on the package (don’t doubt cooking time!). Rinse thoroughly in cold water. Place pasta in medium-sized bowl. Add remaining ingredients and toss well. Adjust the seasoning from mild to hot with the crushed red pepper.
