Saba is a delicious cooked and caramelized reduction of un-aged grape must made from hand picked, sun-ripened Lambrusco and Trebbiano grapes from Modena, Italy–the same kind of grapes that make balsamic vinegars. However, there’s no red wine vinegar added so technically, it’s not a balsamic. It is a dark, sweet and dense condiment, with a lovely, complex flavor redolent with notes of honey, fig, and sundried raisins. Use it to glaze vegetables, meats, and poultry, with cheese plates or as a confectionary condiment for ice cream, yogurt, fruit salad, cakes, and pancakes. Set your “creative gourmet” loose!
